Blue Agave is a large, premium variety of the agave plant. It grows in the high altitude soil of Jalisco, Mexico. Blue agave contains more fructose than other types of agave. Aunt Patty's Blue Agave is a premium variety that has the most fructose content of any agave on the market. It's available in raw dark and light varieties.
