One of a Kind Zucchini Bread with an Aunt Patty Twist

45 minutes in a 350 degrees oven

 

Ingredients:

3 whole organic brown eggs (room temperature)

3/4 cup (liquified) Aunt Patty's Organic Coconut Oil

1 1/2 cup Aunt Patty's Organic Coconut Sugar

1 teaspoon freshly grated lemon peel

1/2 teaspoon organic orange extract

1/4 teaspoon Aunt Patty's Organic Vanilla

2 cups grated zucchini

2 1/2 cups organic unbleached flour (Bob's Red Mill)

3/4 teaspoon sea salt

1/2 teaspoon cinnamon

1/4 teaspoon ground ginger

1 teaspoon Bob's Red Mill baking soda

2 teaspoons baking powder

optional: 1/2 cup chopped pecans, 1/2 cup organic sweet coconut, 2 tablespoons Aunt Patty's Blackstrap Molasses (add if adding coconut)

Directions:

Beat and combine eggs, oil and sugar. Add flavorings and zucchini. Mix dry ingredients together. Stir into wet mixture and add nuts and coconut, mix well. Bake in small greased loaf pans 45 minutes to an hour in a preheated 350 degree oven. Remove to rack and allow to cool.
