Almond Berry Cream Tart

Crust Ingredients

  • 3/4 cup roasted crushed almonds
  • 1/2 cup (8 squares) graham cracker meal
  • 1/2 cup Aunt Patty's Organic Extra Virgin Coconut Oil, liquefied
  • 1 tsp organic vanilla extract
  • 8" springform pan

Crust Instructions

Combine ingredients and press into pan. Refrigerate 30 minutes. Bake 10 minutes and cool completely.

Filling Ingredients

  • 8 oz mascarpone cream cheese
  • 1 cup organic powdered sugar
  • 1 cup heavy cream
  • 1 tsp lemon zest
  • 1 tsp almond extract

Filling Instructions

Combine above ingredients in a bowl and beat until well mixed and setting up. Add additional cream if necessary to make spreadable. Spoon into shell and refrigerate 2 hours. Top with fresh berries before serving.
